Vegan Pancakes (with gluten-free option!)

Delicious pancakes that can be made with all purpose flour or a 1-1 substitute for gluten free!
Ingredients
- 1 cup all-purpose flour, or 1 cup gluten free substitute (we used Bob's Red Mill Paleo Flour*)
- 1 tablespoon coconut sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 teaspoon cinnamon
- 1 cup almond milk
- 3 tablespoons water
- 1/3 teaspoon aquafaba powder
- 2 tablespoons coconut oil
- 1/2 teaspoon vanilla
Instructions
- Combine flour, sugar, baking powder, baking soda, salt and cinnamon in a bowl. Make a well in the center.
- For extra fluffy pancakes, use a stand mixer to whip the water and aquafaba powder into stiff peaks. If in a time crunch, simply add the water and powder to the batter.
- In another bowl mix together milk, water, aquafaba powder, oil and vanilla until combined.
- Pour wet mixture into dry mixture well. Mix until completely combined.
- Spray a griddle or pan with nonstick spray. Heat over medium high heat.
- Use about 1/3 cup batter for even pancakes. Brown both sides and enjoy!
Notes:
*Make sure you are using a 1-1 flour substitute, such as Bob's Red Mill Paleo Flour. Many alternative flours, such as almond or coconut, are not a 1-1 conversion.
