Vegan Peanut Butter Chocolate Chip Baked Oatmeal

This salty, sweet and delicious peanut butter chocolate chip baked oatmeal is easy to make and is a perfect make-ahead breakfast for your busy week. So good, it tastes like dessert!

Ingredients

  • 2 cups rolled oats
  • 1 teaspoon baking powder
  • 1 1/2 cup plant-based milk
  • 1/3 cup Vör Peanut Butter
  • 1/2 cup maple syrup
  • 1 teaspoon vanilla
  • 1/2 cup chocolate chips
  • 1/3 cup unsweetened coconut flakes
  • 1/3 cup peanuts

Instructions

  1. Preheat the oven to 350°F
  2. Mix the oats with baking powder.
  3. Combine the wet ingredients in a separate bowl, then pour into the oats and mix.
  4. Stir in the coconut flakes, chocolate chips and peanuts.
  5. Place in an 8x8 pan lined with parchment paper. Top with extra chocolate chips if desired.
  6. Bake for 40-45 minutes.
