Vegan Peanut Butter Chocolate Chip Baked Oatmeal

This salty, sweet and delicious peanut butter chocolate chip baked oatmeal is easy to make and is a perfect make-ahead breakfast for your busy week. So good, it tastes like dessert!
Ingredients
- 2 cups rolled oats
- 1 teaspoon baking powder
- 1 1/2 cup plant-based milk
- 1/3 cup Vör Peanut Butter
- 1/2 cup maple syrup
- 1 teaspoon vanilla
- 1/2 cup chocolate chips
- 1/3 cup unsweetened coconut flakes
- 1/3 cup peanuts
Instructions
- Preheat the oven to 350°F
- Mix the oats with baking powder.
- Combine the wet ingredients in a separate bowl, then pour into the oats and mix.
- Stir in the coconut flakes, chocolate chips and peanuts.
- Place in an 8x8 pan lined with parchment paper. Top with extra chocolate chips if desired.
- Bake for 40-45 minutes.
