This vegan mac and cheese will blow you away! Such a creamy, cheesy flavor that you'd never know it was vegan.
Ingredients
Cashew Cheesy Sauce
- 1 ½ cups raw cashews, soaked for 8 hours*
- 1 ½ cups water
- 1/3 teaspoon Vör aquafaba powder
- 1/4 cup nutritional yeast
- Juice of 1/2 lemon
- 1 tablespoon apple cider vinegar
- 1 tablespoon dijon mustard
- 2 teaspoons cornstarch
- 1 teaspoon soy sauce
- 1 teaspoon sea salt
- 1 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon turmeric
- 1/4 teaspoon chipotle powder
Pasta
- 16oz pasta of choice
Instructions
- Prepare 16 ounces of pasta of choice
- Blend ingredients together for cashew cheesy sauce in a high powered blender or food processor. Blend until smooth, about 2 minutes.
Notes:
Soaking for 8 hours is recommended for the smoothest consistency, but feel free to soak them for less time (2 hours minimum) or boil them for 5 minutes.
